I know for a fact that Gang Green Nation does this, where they have 32 (for obvious reasons we would have 30) people be assigned an NFL team (NHL in our case) and they perform a mock draft. The Page on GGN is linked below.

I did not participate in this as I have very limited NFL prospect knowledge. I believe if we start this it will be a huge success thanks to the fact that all us Islander fans are very knowledgeable about draft prospects thanks to the sad fact of us always being in a posistion for a good draft pick.
